Yuzu is also known as the Japanese Citron and is a unique and prized fruit used in both cooking and bathing.
Whilst only a small amount of juice is produced from each fruit it has a special bright citrus flavour with floral notes and a small amount goes a long way. It looks like a small, round lemon with a gently pebbled skin. The flavour is sweeter than a true lemon although still zesty.
It's not only the juice that can be used but also the skin. The zest is a key ingredient in multiple Japanese and Asian dishes and sauces.
Both the zest and juice can be used in savoury or sweet recipes like marinades for meat, flavour in baking, in teas, liqueurs, preserves, and to flavour sugar and salt.
The skin - or even the whole fruit! - can be added to the bath releasing the gorgeous aromatic oils and citrus / floral scent.
